The float test, the right shelf in your fridge, and why fresh desi eggs last longer than you think.

Fridge or counter?

In Pakistan's heat, the fridge is best. Keep eggs in their tray on a middle shelf (not the door, where the temperature jumps every time it opens), pointed end down. Unwashed, they keep well for 3–4 weeks.

The water test

  1. 1Fill a bowl with cold water and gently place the egg in it.
  2. 2Sinks and lies flat: very fresh.
  3. 3Sinks but stands on one end: older, still fine to eat, best for boiling.
  4. 4Floats: throw it away.

Older eggs peel more easily when boiled, so save the slightly older ones for anda chanay and salads.

Signs of a fresh egg when cracked

  • A round, high yolk
  • A thick white that holds together
  • A clean smell

Should you wash eggs?

Don't wash eggs before storing. Eggs have a natural protective coating. If a shell is dirty, wipe it with a dry cloth and wash just before cooking.
