Gur keeps what white sugar loses, but it's still sugar. Here's the honest comparison.

How they're made

White sugar is refined until only sucrose is left. Desi gur is made by boiling fresh sugarcane juice in open pans until it thickens and sets, keeping some of the cane's own minerals.

What gur offers

  • Small amounts of iron, potassium and magnesium
  • A deep caramel flavour, so you often use less
  • No bleach or refining chemicals (in good gur)

The honest part

Gur is still sugar. It's a better choice than refined sugar, but enjoy it in moderation, especially if you have diabetes.

How to spot chemical-free gur

  • Golden-brown to dark brown, not bright yellow
  • Tastes of cane, not of soda
  • Slightly soft and crumbly
