What heat does to honey

High heat breaks down some of raw honey's natural enzymes and aroma. Very hot temperatures for long periods can also darken honey and change its taste.

Is it harmful?

Honey in a cup of tea isn't harmful, but you lose some of what you paid for in raw honey. Traditional advice in Ayurveda and Unani medicine also cautions against cooking honey.

The best way

  1. 1Let tea or water cool for a couple of minutes, until comfortable to sip.
  2. 2Stir in honey just before drinking.
  3. 3Use gur or shakkar for recipes that need cooking.
