Fake honey is everywhere. Some popular tests are myths; a few really help. Here's what to trust.

Why honey gets faked

Real honey is expensive to produce, so it's often mixed with sugar syrup or rice syrup. Fake honey can look perfect in the bottle.

Tests that help

  • Thumb test: a drop of pure honey stays put on your thumb; runny, syrupy honey spreads.
  • Water test: pure honey sinks to the bottom of a glass of water as a lump and dissolves slowly.
  • Crystallisation: raw honey usually crystallises in cool weather. Honey that stays perfectly runny for years may have been heated or mixed.
  • Taste: real honey has a floral, complex taste and a slight throat tingle.

Myths

The flame test (honey on a matchstick) and the ant test aren't reliable. Lab testing is the only proof, so buy from a source you trust.

How we source honey

Our honey comes from partner beekeepers we've visited, who move their hives with the seasons. We check every batch for thickness, aroma and taste before it's packed, and it's never heated or blended.

Quick answers

No, the opposite. Crystallisation is natural in raw honey. Warm the jar in warm (not boiling) water to make it runny again.
